Applesauce Cake

Recipe adapted from the cookbook my uncle gave my Auntie Ted in 1953 for Mother’s Day!

Son #2 grafted a Honeycrisp apple tree his sophomore year in high school. I didn’t think we would actually grow a full size apple tree, but I was determined to try!

We planted it in one of my enamelware pots. Then we babied it and watched it grow! It produces the yummiest apples!

Last week he picked all the apples and we made applesauce in the Instant Pot. It is oh so good!

Saturday I took some of the applesauce and made the most delicious cake! Probably the best cake from scratch, I’ve ever made.

I used a recipe from my Auntie Ted’s cookbook as a jumping off point - let me know if you try it!

APPLESAUCE CAKE

1/2 cup shortening softened ( I used shortening; if you try butter, let me know!)

2 cups sugar

1 large egg

1 ½ cups applesauce

2 ½ cups sifted flour (yes, I did sift my flour!)

1 ½ tsp. soda

1 ½ tsp. salt

3/4 tsp. cinnamon

1/4 -1/2 tsp. cloves

1/4 - 1/2 tsp. allspice

1/3 cup water

Preheat oven to 350°

Prepare a 9x13 glass baking dish (grease and flour)

In a medium bowl combine flour, soda, salt, cinnamon, cloves, and allspice.

Mix well

In a separate bowl, cream shortening, sugar, and egg

Add applesauce.

Add flour mixture.

Add water.

Mix well.

Bake for 40-50 minutes

Frost with cream cheese frosting or sift powdered sugar over the top, once while it's still warm, and then again after it's cooled.
